Vinification:  Fermentation in stainless steel tank lasts 10 days. 2 weeks of maceration with skin inside the tank. Then the wine is moved into second passage barriques.
Maturation: 30 months aging in barrique, part French and part American oak
Refining:  2 years in bottle
Production:  8000 bottles
First Year:  2005
Tasting Notes: The wine is aged into second passage barrique to enhance the taste of the Nero d’Avola grape. It has a robust nose and reminds one of Mediterranean herbs, such as Rosemary and Bay tree. It has a strong balsamic essence and full mouth.
